Colline Emiliane {Eating in Rome}
This elegant spot that specializes in the cuisine of Italy's northern region of Emilia Romangna wows you before you even go inside. I stood mesmerized in front of the large picture window where the cooks were rolling out the days eggy pasta in wide flat sheets and long silky ribbons and was late for my lunch date!
Elyssa and I wanted to try as many things on the menu as we could and the staff happily obliged us by splitting our orders for us. We tried triangles of pasta filled with ricotta, chard and sausage and a very traditional spaghetti bolognese. I had to try the restaurants signatures dish Giambonetta di Vitella con Purea, which is the owners grandmothers recipe of long slow cooked veal in milk served with a side of mashed potatoes. I forgot to ask what the glass of red that was brought was, but it was perfect with our wintery food.

I always have room for dessert, no matter the meal. Make sure you do too. The desserts are all made in house and it was difficult to only chose two. We eventually chose a pastry wrapped baked apple that came with freshly whipped zabaglione and a rich slice of walnut caramel cake wth vanilla seed flecked gelato.
