I get lots of emails about cooking classes in Rome. I get asked where do I recommend for cooking classes, but I also get invited to go to cooking classes. It's great. I love to cook. It is always fun to roll out pasta (something I never do at home) and eat with friends. I have watched eagerly as my Instagram pal Alice has been documenting her new culinary space. I was especially pleased when she posted a photo with exotic ingredients like Vietnamese mint and rice paper announcing she was open for business.

Australian Alice now makes her home in Rome and certainly knows her way around a pasta dish. Her first evening course however was for her Australian side and was about making Vietnamese summer rolls and Vietnamese chicken salad. Spice, crunch, exotic flavors, cilantro! I was in. I messaged a few friends and we all met on stormy skied evening at the Latteria Studio. Once the neighborhood shop for milk and dairy, Alice has transformed it into a rustic space to cook, gather and eat. Her background as a food stylist is evident in the piles of linen aprons and colorful dish ware stacked long industrial shelving, the mismatched crystal in a midcentury cabinet and the just right battered farm table in the middle of the room.

We chopped garlic and minced ginger, shredded Vietnamese mint (what a revelation this herb is!) soaked delicate rice paper and rolled our summer rolls. We made a bright and zingy dipping sauce and then we sat down with a cold bottle of Grechetto (a percent pairing) and enjoyed our hard work.

Next we made Chinese chicken salad one with rice noodles and one with crunchy cabbage and again sat around the table and shared our varied stories of how we ended up in Rome and where to find the best exotic ingredients here. And opened another bottle of Grechetto.
